Essential in molés and perfect for sauces, soups, chicken, beef, lamb, and stews, the mulato chile has a sweet, mild, chocolate flavor. It ranks in the 2,500 to 3,000 range on the Scoville Heat Units and won’t overwhelm the main ingredients of your dish-just give it a slight kick. These dark brown, 5″ long chiles can be difficult to find in the United States.

The pequin chile begins its existence as a lovely green chile which changes to bright red or red-orange as it matures. After being dried, the color then darkens even further to a brownish-red. For a chile that is only ½-¾” long and ¼” in diameter, the oval-shaped Pequin chile packs a punch. Coming in around 30,000-40,000 Scoville Heat Units, this smallest of all chiles provides a smoky, nutty flavor. Chefs across the world choose pequin chiles to add an extra kick to their spicy salsas, soups, vinegars, beans, and molés. A Mexican chile with medium heat and a sweet, fruity undertone, the Guajillo chile can be compared to New Mexico chiles. However, the flavor is deeper and sweeter, making it essential to Mexican dishes and any fusion experiment. (De-Stemmed peppers reduce process and preparation time in the kitchen. In commercial kitchens it has been estimated that time savings in preparation of de-stemmed peppers can be as much as 15 minutes per hour.)

Although the japones chile’s distinctly small, slender shape and reddish color clearly make it stand out in a crowd, the transmission of heat is its most notable feature 20,000-30,000 Scoville Heat Units. Although japones chiles are mostly used in Asian cuisine such as stir fry, peanut sauce, and Thai curry, you can put these inexpensive chiles on anything! Ground them into powder and add them to red chile sauce or take individual pods and kick up the heat of your soups and stews.

Repackaging: All prices are based on bulk amounts 5 lb minimum. A $3 per box packing charge will be applied on orders which have a total product weight of less than 5 lbs.
