Known as “cow bells” because of their seeds’ distinct ring after drying, cascabel chiles look like jingle bells. They have a nutty, woody taste and are commonly used in fine Mexican cuisine recipes such as stews, soups, sauces, and salsas. The pequin chile begins its existence as a lovely green chile which changes to bright red or red-orange as it matures. After being dried, the color then darkens even further to a brownish-red. For a chile that is only ½-¾” long and ¼” in diameter, the oval-shaped Pequin chile packs a punch. Coming in around 30,000-40,000 Scoville Heat Units, this smallest of all chiles provides a smoky, nutty flavor. Repackaging: All prices are based on bulk amounts 5 lb minimum. A $3 per box packing charge will be applied on orders which have a total product weight of less than 5 lbs.
