Essential in molés and perfect for sauces, soups, chicken, beef, lamb, and stews, the mulato chile has a sweet, mild, chocolate flavor. It ranks in the 2,500 to 3,000 range on the Scoville Heat Units and won’t overwhelm the main ingredients of your dish-just give it a slight kick. These dark brown, 5″ long chiles can be difficult to find in the United States.
Mulato chiles are related to poblano peppers, which are dried to make ancho chile. While their heat profile is similar (slightly higher—2,500 to 3,000 units on the Scoville Heat Scale) than its relative, mulato chiles offer a complex blend of flavors that include chocolate and licorice with hints of cherry and tobacco.
Mulato chile is one of the “trinity” of chiles required for traditional Mexican molé.
